Thanksgiving Pixie
Have you ever run out of ideas on ways to feed the family leftover turkey?
Below you will find some of my ideas....I normally don't measure ingredients when I cook.
I love to cook, just never measured. The amounts shown are educated guesses.
MONTE CRISTO SANDWICH
YIELDS: 4 sandwiches
1 egg, at room temperature
About 1 cup skim milk
8 slices bread, each lightly buttered on both sides
Thin slices fully-cooked turkey
(amount depends on individual)
Thin slices Swiss cheese
(amount depends on individual)
Raspberry jelly (or preserves, jam)
In a bowl combine egg and milk (beat with wire whisk)
Between two slices of bread, layer turkey and Swiss cheese.
Generously spread with raspberry jam.
With a medium hot skillet, grill sandwiches
until lightly browned (on both sides) and cheese is
melting. Serve immediately with a salad
or other side dish.
NOTE: Use bread of your choice
TURKEY WALDORF
Fully cooked turkey (broken/shredded to small pieces)
Kraft Miracle Whip
Ocean Spray Craisins* (dried cranberries)
Chopped pecans
Diced celery
In a large mixing bowl, combine all ingredients,
stirring until well coated with mayonnaise.
You may add more if needed.
Spread between two slices of bread
of your choice, or serve cold on a
bed of lettuce for a light lunch salad.
*crisp, red, cored & diced apples may be substituted
CRANBERRY-JELLO WALDORF
1 pkg. of cherry Jello gelatin **see note
diced celery
english walnuts
miniature marshmallows
leftover whole cranberry sauce
diced johnathon apples*
Prepare jello as directed on package, before
refrigerating to set, add celery, walnuts, marshmallows
cranberries, and apples. Stir well until all fruit is
coated with jello. Marshmallows will float to the top.
Chill until set. A wonderful, tart, sweet mixture for
the tastebuds! Goes well with leftover turkey.
*any apple will do
**if cranberries have juice, reduce cold water accordingly
BAKED SWEET POTATOES
This will be simple...
for microwave ovens
Clean and microwave sweet potatoes
(pricked with fork for release of steam)
until very tender ... well done
When done slice down the center,
and dab on gobs of butter and sprinkle with
a mixture of cinnamon and sugar.
Great with just about anything!
TURKEY STROGANOV
2 cups of chopped fully cooked turkey
1 can of cream of mushroom soup
1 medium onion (finely chopped)
1 lg. can of mushrooms (including juices)
1 small container of pimento
1 8 oz. container of sour cream
butter
salt & pepper to taste
1 package of cooked egg noodles
While noodles are cooking to preferred tenderness
in a skillet, saute onions in butter until translucent
over high heat. Add remaining ingredients
EXCEPT for sour cream, lowering heat to medium.
Blend well and heat thoroughly.
Just before serving, add the sour cream into the mixture,
Simmer while dishing out noodles.
Stir heated stroganov mixture
and pour over hot noodles. Serve
