Mustard


Ingredients

  • 150g (5oz) dry mustard seeds
  • 1 medium onion, chopped
  • 2 cloves garlic, crushed
  • 1 tsp salt
  • 2 tsp ground black pepper
  • 1 bay leaf
  • 2 tsp Tobasco sauce
  • 2 Tbsp golden syrup
  • 1 Tbsp curry powder
  • 1 cup white wine
  • 1 cup chicken stock

    Combine all the ingredients into a large saucepan and cover with water. Leave to soak for 1 hour, drain and add fresh water to cover. Leave for 2 hours then simmer for the next hour, stirring frequently to prevent the mixture from catching, adding more water or wine as needed. Remove from the heat and cool. Place in a blender or food processor and roughly chop (don't puree') Pour into sterilized jars and store in a cool place for 1 week before using.
