Crown Roast of Lamb with Tipsy Sweet Potato Stuffing

Ingredients

  • 1 Crown Roast - 12 cutlets

    Stuffing Ingredients

  • 500g (1LB) cooked, mashed sweet potato
  • 2 Tbsp sherry
  • seasoning to taste
  • 1 egg, lightly beaten
  • 1 onion, finely chopped
  • 1 Tbsp chopped parsley
  • Directions

    Mix all stuffing ingredients together. Fill the lamb cavity with stuffing and place roast in a baking dish. Bake at 180C (350F) for 1 hour. Serves 6
